MANGO BARBECUE SAUCE"This is a marvelous marinade or basting sauce. Slather a whole chicken with the sweet-hot, slightly smoky mixture before roasting for a savory glaze and tender meat, or use the sauce to coat a pork loin as it roasts or to baste grilled tuna or salmon." 1 small red onion, minced 1 tablespoon olive oil 4 cups mango juice or nectar* 2 tablespoons chopped fresh cilantro leaves 2 poblano chiles, roasted, peeled, seeded and chopped** Kosher salt and freshly ground black pepper In a medium nonaluminum bowl, whisk onion, oil, mango juice, cilantro, chiles, salt and pepper. Let stand 30 minutes to let flavors blend. Use immediately or cover tightly and refrigerate up to one week. Mix well before using. *Mango juice is available in boxes and jars in Latin, Indian and Middle Eastern specialty food stores. **Wear gloves when handling fresh chiles; the oils can cause a burning sensation on your skin.
