FAST FRIES2 medium potatoes 1 tablespoon olive oil Nonstick cooking spray Salt, ground pepper, paprika and/or Cajun spice (to taste) Preheat oven to 450 degrees F. Coat a shallow nonstick baking pan with cooking spray. Scrub potatoes; cut in half lengthwise. Slice each half into several lengthwise wedges. Soak in cold water for 20 minutes. Drain and dry potatoes; place in a plastic bag with oil. Close bag tightly; shake to coat potatoes. Arrange potatoes in a single layer on prepared pan.
