SPICY BROCCOLI BEEF

1 (10 3/4-ounce) can condensed beef broth
1/2 cup water
2 tablespoons cornstarch
1 tablespoon soy sauce
1/2 teaspoon crushed red pepper
2 tablespoons vegetable oil, divided use
4 cups broccoli florets
2 green onions, sliced diagonally
1 pound boneless beef sirloin steak, sliced thinly
hot cooked rice (for serving)

In bowl, combine broth, water, cornstarch, soy sauce and red pepper; set aside.

Set a 10-inch skillet or wok over high heat. Add 1 tablespoon oil; when hot, stir-fry broccoli and onions 2 minutes or until tender-crisp. Transfer to bowl.

Add remaining 1 tablespoon oil to skillet. When hot, stir-fry beef, half at a time, until color just changes. Transfer to bowl with broccoli.

Stir broth mixture into skillet. Cook over high heat until mixture boils and thickens, stirring often.

Add broccoli-beef mixture; heat through.

Serve over rice, with additional soy sauce, if desired.

Yield: 4 servings
