COOL ANTIPASTO KABOBS
2 cups assorted vegetables* 4 ounces firm cheese**, cut in 1/2-inch chunks 4 ounces summer sausage, 3/4-inch slices/quartered 2 tablespoons refrigerated basil pesto 1 tablespoon white wine vinegar 1 cup fresh spinach leaves, lightly packed 8 (10-inch) bamboo skewers
Place vegetables, cheese, and summer sausage in a plastic bag set in a bowl.
For the marinade, stir together pesto sauce and vinegar. Pour over vegetable mixture in plastic bag. Close bag. Marinate in the refrigerator for 1 to 24 hours.
Remove vegetable mixture form refrigerator. Alternately thread vegetables, cheese, summer sausage, and spinach (accordion-pleat style) onto eight 10-inch bamboo skewers.
*such as baby carrots with tops; radishes; 1-inch red sweet pepper squares, halved; or small pattypan squash
**such as peppercorn cheese, smoked gouda, or kasseri
