COCONUT POUND CAKE
1 1/4 cups sugar 1 cup butter, softened 4 eggs 1 cup coconut milk 2 teaspoons coconut extract 2 3/4 cups all purpose flour 2 teaspoons baking powder 1/2 teaspoon salt sweetened whipped cream and toasted coconut (optional, for serving)
Heat oven to 325 degrees F. Grease and flour a lamb or rabbit Nordic Ware pan.
In large mixing bowl, mix sugar and butter until very light and fluffy. Add eggs; mix until very light and lemon colored, about 5-6 minutes. Add coconut milk and coconut extract; mix well. Add flour, baking powder and salt; mix well. Beat on medium speed 2 minutes, scraping bowl occasionally. Spoon into prepared pan.
Bake at 325 degrees for 55-60 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan; cool completely on rack.
Serve with sweetened whipped cream and toasted coconut, if desired.
