HOMEMADE REAL EGG NOODLES
3 egg yolks 1 whole egg 3 tablespoons cold water 2 cups flour 1 teaspoon salt
Beat egg yolks and whole egg slightly; add cold water. Add flour and salt to make a stiff dough.
Turn out on floured board; knead 3 to 5 minutes.
Divide dough into three parts. Roll each part out into paper-thin sheets. Place on large cloth on a table for about 1 hour to dry slightly.
Roll up like a jellyroll. Cut crosswise into 1/8-inch strips or desired thickness. Spread cut noodles on table to dry thoroughly.
Cook in boiling salted water or use in recipes.
