APPLE FRITTER PANCAKES
1 1/2 cups flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1 teaspoon cinnamon 2 eggs 1 1/3 cups milk 2 tablespoons oil or butter, melted 1 cup chopped peeled apples
In a large mixing bowl, stir together flour, baking powder, salt and cinnamon; set aside.
In a small mixing bowl, beat together eggs, milk and oil. Add to dry ingredients. Beat until well-blended. Stir in apples.
Lightly brush a 10-inch nonstick skillet or griddle with shortening. Heat over medium heat. Increase heat to medium-high. Pour batter in 4-inch circles 1 inch apart. Fry until puffy and full of bubbles. Turn. Fry other side until done.
APPLE JUICE SAUCE Makes 1 1/4 cups
1/2 cup brown sugar 1 tablespoon cornstarch 1 cup unsweetened apple juice 1 tablespoon butter or margarine 1/2 teaspoon cinnamon
In small saucepan, combine brown sugar, cornstarch, apple juice, butter and cinnamon. Bring to a boil. Boil for 3 minutes. Remove from heat.
