CHOCOLATE-PECAN NO-BAKE COOKIES

1 (12-ounce) package semisweet chocolate chips (2 cups)
3 tablespoons unsalted butter
1 tablespoon light corn syrup
Pinch salt
2/3 cup dried cranberries or dried cherries
1/2 cup chopped pecans
1/2 teaspoon vanilla extract

In the top of a double boiler set over simmering water, combine chocolate, butter and corn syrup. Stir until melted and smooth.

Remove from heat and stir in salt, dried cranberries, pecans and vanilla until well combined. Let cool.

When cool enough to handle, drop the mixture by tablespoonfuls onto a waxed paper-lined baking sheet. Let stand until firm.

When firm, transfer cookies to an airtight container and refrigerate until serving time.

Makes 30 cookies
