GARLICKY NO-COOK PASTA SAUCE
8 cloves garlic (or more to taste) 4 fresh tomatoes, chopped 2 tablespoons sliced black olives 2 tablespoons olive oil 2 tablespoons balsamic vinegar 1 pound pasta of your choice, cooked (rotini and mostaccioli work well) Fresh basil leaves, chopped (for garnish) Parmesan or goat cheese (for garnish)
In a large serving dish, combine garlic, tomatoes and olives. Drizzle with olive oil and vinegar.
Add the cooked pasta to the garlic mixture; toss well.
Garnish with basil and cheese to taste.
