I think I invented this--LOL. Just noodling around with root vegetables. I oven roasted some carrots with some sweet yellow onion and had about one cup of that on hand. Then I oven roasted two rutabagas, just because they were there.
Then I boiled two potatoes, cut into chunks, until semi-tender. Added the carrots, onion and rutabagas to the pot. Cooked until tender.
Drain, and then put into food processor with about 4 Tbl. butter and about 1/2 cup cream (i used super-premium two percent milk). Salt and pepper to taste.
Super-good. I may never have just plain mashed potatoes ever again.
