CRAB MORNAY FROM CAFE BY THE RIVER
1/2 cup chopped green onions 1 stick (1/2 cup) butter 2 tbsp flour 1 pint half and half 3/4 lb shredded Swiss cheese 1 1b Crab meat 1/4 cup chopped fresh parsley 2 tbsp of sherry cream salt, ground black pepper, ground red pepper (cayenne)
Saute green onions in butter.
Stir in flour for 1 to 2 minutes.
Whisk in half and half and cook until thick.
Add shredded Swiss cheese, let melt.
Add crabmeat, parsley, and sherry; heat. Season to taste with salt, pepper and red pepper.
