BAKED MINIATURE PUMPKINS

"Here's a recipe from executive chef Jim Boyan of Jekyll Island Club Hotel, Jekyll Island, Ga."

4 small sugar pumpkins
4 tablespoons brown sugar
2 tablespoons butter
1 teaspoon ground cinnamon
Vanilla ice cream

Preheat oven to 350 degrees F.

Cut off tops of pumpkins; scrape out seeds and strings. Place 1 tablespoon brown sugar and 1/2 tablespoon butter inside each pumpkin. Sprinkle each with 1/4 teaspoon ground cinnamon. Replace tops of pumpkins. Place pumpkins in baking pan with a little water in the bottom.

Bake 30 minutes or until tender. Pumpkins also can be baked in microwave on high (100 percent power) 10 to 15 minutes.

Serve with vanilla ice cream.

Makes 4 servings
