BEYONCE'S PASTA

1 pound linguine, uncooked
4 Tbsp olive oil
3 Tbsp unsalted butter
1/2 cup shallot or onion, minced
5 or 6 cloves garlic, minced
1 small carton (8 oz) cherry or grape tomatoes
1/4 tsp red pepper flakes
1/4 tsp dried oregano
1/2 tsp dried basil
1/4 cup chopped fresh parsley (for garnish)
FOR SERVING:
1/4 lb grated Romano cheese (use parmesan as an alternative)
fresh ground pepper

Drop linguine in boiling water. Give it a quick stir so it doesn't stick together.

In a large saute or frying pan, over medium high heat, melt butter and oil. When bubbles subside, saute onions for six minutes.

Add garlic and cook one minute.

Add tomatoes. Add pepper flakes, oregano, and basil and cook one more minute. Turn off heat.

When pasta is al dente (a little firm in middle), lift out of boiling water with tongs and drop in butter/garlic mixture. Toss pasta to mix with sauce. Add a ladle of the pasta water to the linguine (this will give the sauce a better consistency) and garnish with parsley.

Serve with grated Romano and fresh cracked pepper.
