FRESH MANGO SALSA
1 cup chopped ripe mango 1 large firm tomato, seeded, drained and chopped 1/2 cup finely chopped red bell pepper 1/4 cup finely chopped red onion 2 teaspoons lime juice 1 tablespoon olive or canola oil 1/4 cup chopped fresh cilantro or parsley Pinch of sugar Salt and freshly ground black pepper 1/2 teaspoon cayenne pepper, or to taste
Mix together all ingredients in a bowl.
Refrigerate 1 to 3 hours to allow flavors to fully develop and meld before serving.
