HUNGARIAN HOME-STYLE POTATOES A LA PAPRIKA
2 lbs. potatoes 1/4 cup vegetable oil 1 1/2 cups chopped onion 1 clove garlic, minced 1 tsp. paprika 1 tsp. salt 1/2 tsp. caraway seeds 1 green pepper, seeded and thinly sliced 2 tomatoes, chopped 1 cup boiling water Few drops hot pepper sauce Fresh chopped parsley, or cilantro, garnish
Peel potatoes and cut as for French fries.
Heat oil in a skillet and saute onions about 10 minutes.
Add garlic, paprika, salt, caraway seeds, potatoes, green peppers and tomatoes. Cook over low heat 10 minutes, mixing frequently.
Add water, cover and cook over low heat about 15 minutes. Season with hot pepper sauce.
Scoop into serving dish and garnish.
