DOWN SOUTH CASSEROLE
4 hard-cooked eggs, divided use 1/4 cup butter or margarine, melted 1/4 cup sifted all-purpose flour 1/2 tsp. salt Dash ground black pepper 2 cups milk 1 lb. bulk pork sausage, cooked and drained 1 can (1 lb.) whole kernel corn, drained 1 cup soft bread crumbs
Slice two of the eggs into 1 1/2 quart casserole.
In a saucepan, blend butter, flour, salt and pepper. Add milk all at once. Cook, stirring constantly, until mixture is boiling and thickened.
Stir in sausage and corn. Pour over sliced eggs.
Slice remaining two eggs; arrange over top of sausage mixture. Sprinkle with bread crumbs.
Bake in a preheated 375 degree F oven for 20 to 25 minutes or until heated through.
