MEATBALL-VEGETABLE SKILLET
1/3 cup fine, dry bread crumbs 1/2 cup undiluted Carnation Evaporated Milk 1 pound ground beef 1 teaspoon salt Few grains ground black pepper 1/4 teaspoon nutmeg 2 tablespoons grated onion 2 tablespoons flour 2 tablespoons shortening 2 cups thinly sliced raw potatoes 1 (10 1/2 ounce) package frozen peas 4 carrots cut in quarters 4 to 8 small white onions 1 cup water 1/2 teaspoon salt Few grains ground black pepper
Soak bread crumbs in Carnation.
Place beef in mixing bowl. Add 1 teaspoon salt, pepper, nutmeg, onion and Carnation mixture. Mix thoroughly. Divide meat mixture into 12 portions. Shape into balls. Roll meatballs in flour to coat.
Melt shortening in electric frying pan (or deep skillet with cover). Add meatballs and brown on all sides.
Add the vegetables and water. Sprinkle with 1/2 teaspoon salt and pepper to taste.
Cover tightly. Turn electric frying pan to low heat (or on stove). Cook until vegetables are tender, about 30 minutes. Serve immediately.
