DANISH CREME
1 1/2 cups milk 1/4 cup sugar 1/2 teaspoon salt 2/3 cup Minute Rice, uncooked 1/4 cup chopped blanched almonds 1 teaspoon vanilla 1/2 cup heavy (whipping) cream (for serving) Bing Cherry Sauce (recipe follows)
Boil milk, sugar, salt, and Minute Rice uncovered for 8 minutes. Fluff rice occasionally. Remove from heat; cover tightly. Let stand 10 minutes.
Add almonds and vanilla. Cover and chill.
TO SERVE: Whip cream; fold into rice mixture. Serve with Bing Cherry Sauce.
BING CHERRY SAUCE
1 (17 oz.) can pitted Bing cherries, drain, reserve syrup water 2 tablespoons cornstarch dash of salt 1 teaspoon lemon juice 1/2 teaspoon almond extract (optional)
Add enough water to syrup to make 1 1/2 cups. Blend syrup, cornstarch, and a dash of salt. Cook and stir until thickened and clear.
Add cherries, lemon juice, and, if desired, almond extract. Cool.
