LOUISIANA’S GOLDEN YAMS AND PORK
2 tablespoons corn syrup 3/4 cup brown sugar 1/2 cup orange juice 1 tablespoon grated orange rind 4 large Louisiana Golden Yams, boiled and peeled Cooked pork roast (or 4 thick pork chops, cooked) (for serving)
Combine syrup, sugar, orange juice and rind in a skillet; bring to a boil and add whole boiled and peeled yams. Cook over low heat for 30 minutes, turning yams occasionally.
Serve hot with pork roast or chops.
