PARTY STEAK
4 beef fillets, 1 inch thick 2 tablespoons Wesson Oil 2 tablespoons finely chopped onion 1/2 cup red wine 1/4 cup water 2 teaspoons tomato paste, such as Hunt’s Salt and pepper to taste 8 large mushrooms, sliced Juice of 1/2 lemon 1 tablespoon minced parsley
Brown fillets quickly on both sides in Wesson Oil. Remove meat to hot platter; keep hot for serving.
Cook onions in drippings until tender.
Add wine, water, tomato paste, salt and pepper. Cook to reduce volume by half. (This mellows the flavor.)
Add mushrooms and lemon juice; simmer about 5 minutes.
Add parsley and pour immediately over fillets.
