FISH PARMESAN
6 small fish or 2 pounds fish fillets Salt and pepper About 1/4 cup flour 1 egg 2 tablespoons milk 1/2 cup crushed butter crackers (16 crackers) 1/2 cup grated Parmesan cheese Wesson Oil to depth of 1 inch in deep fry pan FOR THE LEMON-PARSLEY SAUCE: 1/4 cup chopped parsley 1 small onion, chopped 1/4 cup lemon juice
Season the fish and coat lightly with flour. Break egg into shallow bowl and beat with milk.
Combine cracker crumbs with cheese. Dip fish into egg, then into cracker-cheese mixture to coat well.
Heat Wesson Oil in fry pan to 375 degrees F. Fry fish 3 to 5 minutes, turning to brown all over. Drain on paper towels.
Combine ingredients for Lemon-Parsley Sauce; spoon over fish. Serve on hot platter.
