ARTICHOKE FETTUCCINE1 (1-pound) package fettuccine, uncooked
6 tablespoons butter
2 cups heavy (whipping) cream
1 (8-ounce) can artichoke hearts, drained and chopped
1/8 teaspoon ground nutmeg
1/4 cup grated Romano cheese
1/4 cup grated Parmesan cheese
1 egg yolk, beaten
Cook fettuccine according to package directions; drain.
Melt butter in a medium saucepan; add whipping cream, artichoke hearts, nutmeg and cheeses. Stir constantly over medium heat until cheeses melt. Add egg yolk; continue cooking for another 3 to 5 minutes.
Place fettuccine in serving bowl; add cream mixture Stir well and serve immediately.
Serves 6-8
