PATTY MELTS WITH SMOTHERED ONIONS
1 pound ground beef or turkey 1/4 teaspoon dried thyme leaves 1/4 teaspoon dried oregano leaves 2 teaspoons Dijon mustard 1/2 teaspoon salt 1/8 teaspoon pepper 1 clove garlic, finely chopped Smothered Onions (right) 4 slices (3/4 ounce each) Swiss cheese 8 slices rye bread
Heat coals or gas grill.
Mix all ingredients except Smothered Onions, cheese and bread. Shape mixture into 4 patties, about 3/4 inch thick.
Prepare Smothered Onions; keep warm.
Cover and grill patties 4 to 5 inches from medium heat 12 to 15 minutes, turning once, until no longer pink in center. Top patties with cheese. Cover and grill about 1 minute longer or until cheese is melted.
Add bread slices to side of grill for last 5 minutes of grilling, turning once, until lightly toasted.
TIP: Because of their lower fat content, turkey patties may stick to the grill unless the grill is oiled first. For safety reasons, always brush a grill rack with oil before coals are lit or gas is turned on.
Place patties on bread and top with Smothered Onions.
SMOTHERED ONIONS
1 teaspoon vegetable oil 2 medium onions, thinly sliced and separated into rings 1/8 teaspoon salt Dash of pepper
Heat oil in 8-inch skillet over medium-high heat. Cook onions in oil, stirring frequently, until tender. Stir in salt and pepper.
