GRILLED TROUT WRAPPED WITH BACON4 whole trout (10 12 ounces each), cleaned and patted dry Salt and freshly ground black pepper 8 sprigs fresh rosemary or sage 12 slices bacon Lemon wedges (for serving) Heat a grill or broiler until hot. Position the rack about 5 to 7 inches from the heat. Season each trout inside and out with salt and pepper and put 2 sprigs of rosemary in the cavity. Wrap 3 bacon slices around each fish. Lay trout in grilling racks and cook until skin and bacon are crisp, about 5 minutes. Turn rack and broil 5 minutes more or until bacon is crisp on second side. Serve with lemon wedges.
