Msg 3112488Papusas are a Central American food from El Salvador and Honduras, which are in Central America, not South America. My Salvadoran family say they might be found in some places in Guatemala now, most likely taken there from Salvadorans. Among all of my family and travels in El Salvador, I've only seen the slaw put on top of the pupusa; tearing it open to insert the slaw must be from a select region. In La Union, San Miguel, where I had some of the BEST (I hope my mother-in-law isn't reading this) they served it with brown and red sauces; ab-so-LUT-ly delectable!!! I've also known of them to be made with a pumpkin blossoms and with loroco, a tiny green vegetable that looks like a grain.
Also, you might want to try searching out Salvadoran tamales. They are moister than Mexican tamales. My mother-in-laws are the best!, but so far I haven't been able to get her to share the recipe or teach me how to make them.
