TURKEY PARMIGIANA8 oz. uncooked fettuccine, broken in to 3-inch pieces
4 (4-oz.) ground turkey patties
1/3 cup Italian style bread crumbs
2 tablespoons olive oil or oil
1/2 teaspoon dried Italian seasoning
1 1/3 oz. (1/3 cup) shredded fresh Parmesan cheese
1 (14-oz.) jar spaghetti sauce
4 oz. (1 cup) shredded mozzarella cheese
Heat oven to 400 degrees F. Spray 13x9-inch (3-quart) baking dish with nonstick cooking spray.
Cook fettuccine to desired doneness as directed on package. (Undercook pasta a little because it will also bake for 25-30 minutes.)
Meanwhile, coat turkey patties with bread crumbs. Heat 1 tablespoon of the oil in large skillet over medium-high heat until hot. Add turkey patties to skillet; cook 3 to 5 minutes on each side or until no longer pink in center.
Drain fettuccine; return to saucepan. Add remaining tablespoon of oil and Italian seasoning; toss until well mixed. Place in bottom of spray-coated baking dish. Sprinkle with Parmesan cheese. Arrange patties over cheese. Top with spaghetti sauce; sprinkle with mozzarella cheese. Spray sheet of foil with nonstick cooking spray; cover baking dish.
Bake at 400 degrees F for 25-30 minutes or until mixture is thoroughly heated and cheese is melted.
VARIATION:Substitute a short pasta such as rotini or penne for the fettuccine.
TO MAKE-AHEAD:For advance preparation, assemble, tightly cover and refrigerate this casserole several hours ahead of time. When baking, add 5 to 10 minutes to the time stated in the recipe.
