NEAPOLITAN VEGETABLE MOLD
2 packages (3 oz. each) Jell-O Lemon Gelatin 1 tablespoon salt 2 cups boiling water 1 1/2 cups cold water 3 tablespoons vinegar 1 1/2 cups coarsely chopped carrots 1 3/4 cups finely chopped cabbage 1 teaspoon finely chopped scallions 1 1/2 cups finely chopped spinach
Dissolve gelatin and salt in boiling water. Add cold water and vinegar. Divide into three equal parts. Chill until slightly thickened.
Fold carrots into one part slightly thickened gelatin. Pour into 8x4-inch loaf pan. Chill until set, but not firm.
Fold cabbage into second part slightly thickened gelatin. Pour over carrot layer and chill until set, but not firm.
Fold scallions and spinach into third part slightly thickened gelatin. Pour over cabbage layer. Chill until firm.
TO SERVE: Unmoid and slice. Garnish as desired
