BEEF SOUP
1 carrot 1 tomato 1 onion 1 stalk celery 1 sprig parsley 1/2 tsp. salt 1/4 tsp. pepper 2 quarts water 1 1/2 lbs. beef with bone 2 cups Acini di Pepe, uncooked
Wash vegetables and place them in a large kettle; add salt and pepper. Add 2 quarts of water and beef and bring a boil. Reduce heat and simmer for two hours.
Remove meat and strain soup. Set meat aside and keep warm.
Add two cups of macaroni to soup and slow boil for 10 to 12 minute
Serve meat as a side dish.
