SAUSAGE STUFFING

1 lb. sausage meat
2 tbsp. fat (oil or shortening)
1 cup chopped celery
1/2 cup chopped onion
1/4 tsp. poultry seasoning
1 tablespoon salt
1/4 teaspoon ground black pepper
2 eggs
1/4 cup water
6 cups bread cubes
strips of bacon

Fry sausage meat in the hot fat in heavy, skillet. Add celery onion, poultry seasoning, salt and pepper. Continue cooking until onion is transparent.

Beat eggs in 1/4 cup water. Add egg mixture to bread cubes. Stir in meat mixture. Put entire mixture in 9x9x2 inch pan. Top with strips of bacon.

Bake in a moderate oven (375 degree F) for 30 minutes.
