RICE JARDIN
3/4 cup chopped onions 1 1/2 pounds zucchini, thinly sliced 3 tablespoons butter or margarine 1 (1 pound) can whole kernel corn, drained 1 (1 pound) can tomatoes 3 cups cooked rice 1 1/2 teaspoons salt 1/4 teaspoon ground black pepper 1/4 teaspoon ground coriander 1/4 teaspoon leaf oregano
Saute onions and zucchini in butter until tender.
Add remaining ingredients. Cover and simmer 15 minutes.
