BAKED POTATOES WITH CHEF`S CHEESE SAUCE

"When potatoes are done, roll gently under hand. Immediately crisscross tops with fork tines; press ends, pushing up to fluff."

5 or 6 baking potatoes
1/2 cup dairy sour cream
4 tablespoons butter or margarine, softened
1 cup shredded sharp process American cheese
2 tablespoons chopped green onion

Scrub potatoes. For crunchy skins, bake as is; for soft skins, rub with shortening.

Bake in hot oven (425 degrees F) 40 to 60 minutes, depending on size of potatoes.

Serve with Chef`s Cheese Sauce.

TO PREPARE THE CHEF'S CHEESE SAUCE:
Have sour cream, butter or margarine, cheese, and onion at room temperature; with electric mixer, beat together till light and fluffy.

Makes 5 or 6 servings
