HAMBURGER PANCAKE ROLL-UPS
"Satisfying Stroganoff flavor wrapped in pancakes under a blanket of bubbly cheese."
FOR THE FILLING: 1 pound ground beef 2 tablespoons instant minced onion 2 tablespoons Bisquick baking mix 1/3 cup catsup 1 tablespoon prepared mustard 1/2 teaspoon salt 1/4 teaspoon pepper 1 cup dairy sour cream FOR THE PANCAKES: 2 cups Bisquick baking mix 1 egg 1 2/3 cups milk 1 cup shredded Cheddar cheese (about 4 ounces) (for topping)
Heat oven to 350 degrees F.
TO MAKE THE FILLING: Cook and stir ground beef and onion in 10.inch skillet until beef is light brown; drain.
Stir in 2 tablespoons baking mix, the catsup, mustard, salt, pepper and sour cream. Simmer uncovered 5 to 10 minutes.
TO MAKE THE PANCAKES: Beat 2 cups baking mix, the egg and milk with hand beater until smooth. Pour about 1/2 cup batter onto hot griddle. (Grease griddle if necessary.) Each pancake should be about 7 1/2 inches in diameter.
Cook until pancakes are dry around edges. Turn and bake other sides until golden brown. Cool slightly.
TO ASSEMBLE AND BAKE: Spoon scant 1/2 cup beef mixture onto each pancake. Roll up; place seam sides down in ungreased oblong baking dish, 13x9x2 inches. Sprinkle with cheese.
Bake in 350 degree F oven until heated through, about 10 minutes.
