CHEESY EGGPLANT

1 small eggplant
1 egg
2 tablespoons vegetable oil
2 tablespoons milk
1/2 cup fine dry bread crumbs
1/2 cup finely shredded sharp Cheddar cheese
1/2 teaspoon salt
3/4 teaspoon oregano leaves
Dash of cayenne
Melted margarine (for topping before baking)

Peel eggplant and cut in 1/4-inch slices; set aside.

Beat egg with the oil and milk; set aside.

Mix next 5 ingredients together.

Dip eggplant slices in egg mixture, letting excess drip off, then in crumb mixture. Arrange on very well greased cookie sheet and drizzle with margarine.

Bake on highest shelf in preheated 450 degree F oven 8 to 10 minutes, or until tender.

Makes 4 to 6 servings
