BEETS WITH ORANGE SAUCE
2 large oranges 1 tablespoon cornstarch 2 to 3 large beets, cooked, drained, skinned and sliced Pinch ground nutmeg Pinch ground black pepper
Grate I teaspoon orange rind; reserve. Squeeze 1 cup juice.
Combine orange juice with cornstarch in a medium-size saucepan. Cook, stirring constantly, until mixture thickens and bubbles.
Add beets, nutmeg, pepper and served orange rind. Heat until piping hot.
