MICROWAVE PEACH CHUTNEY
Serve it as an accompaniment to ham or pork.
1/3 cup firmly packed brown sugar 1/3 cup raisins 1/4 cup chopped onion 2 tablespoons cornstarch 1 tablespoon chopped crystallized ginger 1/ 8 teaspoon allspice 1/ 8 teaspoon cayenne pepper 1/2 cup cider vinegar 1/3 cup honey 1 (29 oz.) can peach halves, drained, finely chopped
In 2-quart microwave-safe bowl, combine all ingredients. Microwave on HIGH for 9 to 14 minutes or until mixture boils and thickens, stirring every 2 minutes.
Spoon into 3 clean, hot 8-oz. jars; screw lids on firmly.
Store in refrigerator up to 3 weeks.
