RED ONION POTATO SALAD
By marinating hot potatoes in dressing while they chill, you bring out the full flavor and you’ll need less dressing.
6 medium Wisconsin potatoes, peeled, cooked and sliced 1 cup sliced celery 1 cup thinly sliced red onion 1/3 cup chopped parsley 1/4 cup low-calorie Italian dressing 3 tablespoons wine vinegar 2 teaspoons salt Dash cayenne pepper
In large bowl combine hot potatoes with remaining ingredients. Refrigerate to chill.
