BARILLA PLUS PASTA WITH SPRING VEGETABLES
1 (14.5 oz.) box Barilla Plus Penne 1/4 cup extra virgin olive oil 1/2 medium white onion, chopped (1/2 cup) 2 cloves garlic, minced 1 (1 lb.) bunch asparagus, trimmed, cut into 1 inch diagonal pieces 2 pints cherry tomatoes, cut into halves (4 cups) 1 yellow squash, cut into small chunks (2 cups) Salt and pepper, to taste 3/4 cup chicken broth (6 oz) 6 fresh basil leaves, cut into thin strips
Cook pasta according to package directions.
Meanwhile, heat olive oil in a large skillet over medium-high heat. Add onion and garlic. Saute 3 to 4 minutes, stirring occasionally.
Add asparagus and continue cooking 3 additional minutes.
Add tomatoes and squash; saute an additional 2-3 minutes, or until tomatoes are softened. Season with salt and black pepper to taste.
Add chicken broth and reduce heat to a simmer. Continue cooking to heat thoroughly.
Drain pasta and add to the skillet. Add basil, mix well and serve.
