TOMATO BASIL SOUP

~ this recipe is as good as any I have had in any restaurant. I made it again today as it is cold here in Texas and I thought something so good should be shared ~

2 large cans (28 to 32oz each) peeled whole tomatoes
1 (14 oz) can tomato sauce
8 oz chicken broth (1 cup)
1 stick (1/2 cup) unsalted butter
1 bunch fresh basil ,chopped (basil in the jar can be used if necessary)
salt and pepper to taste
8 oz heavy (whipping) cream

Simmer tomatoes, tomato sauce and chicken broth for 30 minutes.

Use a hand-held blender (not a mixer) to puree tomatoes or use a blender in batches and return to pan. Add butter, chopped basil and cream. Simmer for 8-10 minutes and reduce heat to low. Add salt and pepper to taste.

The leftovers seem to be even better the next day for some reason. Enjoy.
