FLORIDIAN SWISS STEAK
1 1/2 pounds round steak, cut 1 1/2 inches thick 4 tablespoons flour 1 1/2 teaspoons salt, divided use 1/4 teaspoon ground black pepper 3 tablespoons shortening 2 medium onions, sliced 2 teaspoons brown sugar 1 cup grapefruit juice Grapefruit sections (for garnish) Chopped parsley (for garnish)
Mix the flour, 1/2 teaspoon of the salt and 1/4 teaspoon pepper. Sprinkle steak with half the flour mixture and pound with the edge of a heavy plate, until all the flour has been taken up by the meat. Turn and pound in remaining flour. Reserve any flour remaining.
Heat the shortening in a heavy skillet; brown the steak on both sides.
Remove steak; add onions and cook until lightly browned.
Add reserved seasoned flour, remaining 1 teaspoon salt and sugar; stir to a smooth paste. Stir in grapefruit juice; add meat.
Cover tightly and cook slowly until tender, about 1 1/2 hours, or bake in a moderate oven (350 degrees F) 1 1/2 hours.
Garnish with grapefruit sections and parsley.
