CRUNCHY COFFEE KUCHEN
1 cup unsifted all-purpose flour 1 cup firmly packed brown sugar 11/2 teaspoons Calumet baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1/2 cup vegetable shortening 1 1/2 cups Post Raisin Bran 1 teaspoon Maxwell House instant coffee 2/3 cup milk 1 egg, slightly beaten 1/4 cup chopped pecans
Combine flour, brown sugar, baking powder, cinnamon and salt in bowl. Cut in shortening until mixture is crumbly. Add cereal. Measure 1/3 cup of the mixture: set aside.
Add instant coffee to remaining flour mixture. Stir in milk and egg; blend thoroughly. Pour into greased and floured 9-inch pie pan. Sprinkle reserved mixture on batter; then sprinkle with pecans.
Bake at 350 degrees F for 30 to 35 minutes, or until cake tester inserted in center comes out clean. Serve warm.
