CARIBBEAN ROAST PORK LOIN2 teaspoons olive oil
1 teaspoon pepper
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1 (3 1/2-pound) boneless rolled pork loin roast
Preheat oven to 350 degrees F.
Combine the oil, pepper, cinnamon and nutmeg and rub over the roast. Place on a rack in a shallow roasting pan.
Bake for 1 1/2 to 2 hours or until a meat thermometer readers 160 degrees F. Let stand for 10 minutes before slicing.
Makes 12 servings
