DIPPING SAUCES FOR ARTICHOKES
MUSTARD DIPPING SAUCE Makes 1 1/3 cups
1 cup milk 3 tbsp mustard 2 tbsp each flour and butter 1/8 tsp each thyme and salt 1 1/2 tbsp white wine vinegar
Whisk milk, mustard, flour, thyme and salt in saucepan. Heat until thickened and slightly bubbly. Remove pan from heat. Whisk in vinegar and butter until melted and smooth. Serve warm.
LEMON DIPPING SAUCE Makes 2/3 cup
1/2 cup mayonnaise 4 tsp lemon juice 1/2 tsp Dijon mustard 1 clove garlic, chopped 1/8 tsp salt pinch ground black pepper
Whisk mayonnaise, lemon juice and mustard in bowl. Mash together garlic and salt until it makes a paste. Stir garlic into mayonnaise mixture along with pepper.
