DELICIOUS FRUIT TART
1 pkg (about 1 lb) ready made puff pastry FOR THE CUSTARD: 1/2 cup sugar 2 tbsp all purpose flour a pinch of salt 1 cup milk 3 egg yolks 1 tbsp butter or margarine 1 tsp vanilla extract FOR SERVING: Assorted fruit (fresh strawberries, peaches, pears, apricots and kiwi) 1/2 cup apple jelly Whipped cream
Thaw folded pastry at room temperature for 20 minutes.
MEANWHILE, PREPARE THE CUSTARD: In a saucepan combine sugar, flour, and salt. Add milk, stirring until smooth. Over medium heat, cook stirring constantly, until mixture is thick. Simmer 5 minutes.
Stir a little of the sauce into egg yolks. Return mixture to pan, stirring constantly. Reduce heat. Add butter. Heat until thickened.
Remove from heat. Beat in vanilla extract. Cover. Chill.
TO PREPARE THE PASTRY: Carefully unfold each pastry. Trim each into a 9 inch circle. Place 1 circle on ungreased baking sheet.
Cut out center from second round making a 1 inch wide ring. Brush a 1 inch wide band around edge of pastry round on baking sheet with water. Place ring on top. Press together. Prick all over with fork.
Bake at 400 for 20 to 25 minutes or until puffed and golden. Cool on rack.
TO SERVE: Place pastry on serving platter. Fill center with custard. Arrange fruit on top. Heat apple jelly. If still lumpy, press through sieve. Cover fruit evenly. Chill tart. Serve same day as made. Garnish with whipped cream.
