EASY PARTY SALAD

1 head green leaf lettuce
1 banana, sliced
1 red appple, unpeeled, diced
1 orange, peeled, cut into wedges
1 pear, peeled, diced
1/4 cup roasted peanuts
seeds of 1 pomegranate
1/2 lime, thinly sliced
Strips of orange peel
LEMON DRESSING:
6 tbsp olive oil
2 tbsp lemon or lime juice
2 tbsp red wine vinegar
2 tsp granulated sugar
1/4 tsp each salt and black pepper

Line a bowl or platter with whole lettuce leaves. Shred remaining lettuce. Add to bowl.

In a separate bowl, combine banana, apple, orange and pear. Place over lettuce. Top with peanuts and pomegranate seeds.

Combine all dressing ingredients. Blend well. Pour dressing over salad. Toss well.

Garnish with lime slices and orange peel strips. Serve immediately.
