FRESH TOMATO PIZZA WITH SALAMI
1 pkg active dryyeast 2/3 cup warm water 2 tsp granulated sugar 1/2 tsp salt 3 tbsp olive oil 2 cups aall purpose flour 2 medium onions, finely chopped 1 clove garlic, minced o r pressed 1 tsp dried oregano leaves 1/4 lb dry salami, thinly sliced 3 medium tomatoes, sliced about 1/4 inch thick 2 cups shredded monterey jack cheese
In a large bowl, place water. Sprinkle with yeast. Let stand 3 to 5 minutes. Stir in sugar, salt and 1 tbsp oil. Add 1 1/3 cups flour. Mix well. Beat 3 minutes or until dough pulls away from bowl.
Stir in enough flour to make a soft dough. Turn dough onto floured board. Knead 8 to 10 mminutes until smooth and springy.
Place dough in greased bowl. Turn once. Cover. Let rise in warm place about 30 minutes or until doubled.
In saucepan, heat 2 tbsp oil. Add onions. Saute until limp. Stir in garlic and oregano.
Punch down dough. Roll or pat into a greased 13 inch pan. Spread with onion mixture. Top with a layer of salami. Add tomaato slices. Sprinkle with cheese.
BAke at 450 for 15 to 20 minutes until crust is well browned. |
