GARLICKY ROASTED SWEET POTATOES3 large sweet potatoes, peeled and cut in 1/2-inch dice
olive oil
4 cloves garlic, minced
salt and pepper
Toss the diced sweet potato with some oil, add salt & pepper to taste. Arrange in a single layer on a baking sheet.
Bake at 500 degrees F for 15 minutes, stir well. Bake another 15 minutes.
Transfer to a bowl, toss with the garlic, cover and let rest for 5-10 minutes.
