TOMATO SAUCE EAST
1 cup sliced green onion 2 cloves garlic, chopped finely 2 tsp. grated fresh ginger (or 1/2 tsp. powdered ginger) 2 Tbsp. vegetable oil 3 lbs. fresh California tomatoes (about 6 large), peeled, seeded and coarsely chopped 3 Tbsp. soy sauce 1 Tbsp. sugar 1/2 tsp. salt 1/8 tsp. red pepper flakes 2 Tbsp chopped fresh cilantro 1 tsp. oriental sesame oil 8 oz. pasta, cooked
In large skillet, saute green onion, garlic, and ginger in vegetable oil for 1 minute.
Add California tomatoes, soy sauce, sugar, salt, and red pepper flakes. Cook over medium-high heat, crushing California tomatoes with the back of a spoon and stirring frequently, about 10 to 15 minutes or until sauce thickens.
Stir in cilantro and sesame oil. Toss with hot, cooked pasta.
