SKILLET FRIED CORN
2 Tbsp. butter or margarine 2 cups corn kernels: 4 or 5 large ears, scraped, or 1 pkg. (10 oz.) frozen cut corn or 1 (12 or 16 oz.) can corn 1/2 cup chopped ham or pepperoni 1/2 cup chopped onion 1/2 cup chopped green pepper 1/4 tsp. salt 1/4 tsp. freshly ground black pepper 3 Tbsp. cream or milk
Heat butter in medium-size skillet until hot, but not smoking.
Add corn, ham, onion, and green pepper. Saute, stirring often until the onion and green pepper are crisp-tender (5 minutes).
Stir in salt, pepper and cream; warm just enough until heated throughout.
