CHI-CHI'S BLACK BEAN AND CORN SALAD
FOR THE SALAD: 1 (15 ounce) can black beans, drained 1 (11 ounce) can whole kernel corn, drained 1/2 cup cubed green bell pepper (1-inch) 1/2 cup cubed red bell pepper (1-inch) 1/2 red onion, cut into 1/8-inch slices, slices then cut in half 1/4 cup Chi-Chi’s Green Jalapeno Wheels FOR THE DRESSING: 1/4 cup vegetable oil 2 tablespoons red wine vinegar 1/2 teaspoon salt 1/4 teaspoon ground cumin 1/4 teaspoon coarsely ground pepper
In large bowl, combine all salad ingredients. Mix well; set aside.
In small bowl, combine all dressing ingredients. Mix well. Toss with Salad.
Refrigerate 1 hour to blend flavors.
