LEMON HORSERADISH NEW POTATOES1/4 cup Land O Lakes Sweet Cream Butter 1/2 tsp. salt 1/8 tsp. pepper 1 tbsp. prepared horseradish 2 tsp. lemon juice 12 (1 1/2 lb.) tiny new potatoes, washed, unpeeled except for 1/2-inch strip around center of potato 6 (1/4-inch) slices lemon (for garnish) 2 tbsp. chopped fresh parsley (for garnish) Heat oven to 350 degrees F. In 2 quart casserole melt butter in oven (6 to 8 minutes). Stir in salt, pepper, horseradish and lemon juice. Stir in potatoes until well coated with butter. Cover; bake for 55 to 65 minutes or until potatoes are fork tender. Garnish with lemon slices and sprinkle with parsley. To serve, spoon butter sauce over potatoes. MICROWAVE DIRECTIONS:In 2 quart casserole melt butter on high (50 to 60 seconds). Stir in salt, pepper, horseradish and lemon juice. Stir in potatoes until well coated with butter. Cover; cook on high, stirring after 1/2 the time, until potatoes are fork tender (10 to 12 minutes). Let stand 5 minutes. Garnish with lemon slices and sprinkle with parsley. Serve as directed above.
